The World of Mugs and Microwaves

It’s Monday morning; you slept through your alarm and you need to catch the bus in ten minutes. As you’re ready to leave your stomach growls in hunger; you know you have to get breakfast because you won’t make it to lunch. What can you make in those ten minutes that doesn’t involve bland cereal or toast?

Do you like french toast? How about cheesy scrambled eggs? And who could forget the classic cinnamon roll; it’s a common favorite among students of all ages! There is a way to make all these delicious options for breakfast AND have time to catch the bus! How, you ask? The world of microwaves and mugs has a lot more to offer to this world than one may think.

This week, we set out to find quick and easy breakfast solutions for students on the go. Our favorites? French toast, scrambled eggs, and cinnamon rolls. The catch? They were all cooked in the microwave in under two minutes. In addition, we also mixed up a fruity breakfast smoothie: another delicious option. Curious yet? Check them out!

French Toast in a Mug

1 tbs Butter

¼ cup Milk

1 Egg

¼ tsp Ground Cinnamon

¼ tsp White Sugar

¼ tsp Vanilla Extract

2 Slices of Bread (cut into cubes)

This recipe takes slightly more time to make than the others, but if you love french toast as much we do, it’s worth it! Start by cutting the bread into cubes, ideally the size of a quarter. Mix the butter, milk, egg, sugar, vanilla, and cinnamon into the mug. Put the bread cubes into the mug, making sure that they are all covered by the egg mixture. Let them soak for approximately 5 minutes, or until they look soggy. Now simply put the mug in the microwave for one minute on high, or until the bread has completely soaked up the egg. Take it out, cover it in your favorite syrup, and enjoy!

Scrambled Eggs in a Mug

2 Eggs

1 tbs Milk

1 tbs Cheese

Salt and Pepper

As we all know, eggs are a crowd favorite. The only downside is they take forever to scramble, poach, or cook them sunny side up. Now, there is a way to have scramble eggs in under a minute. First crack two eggs in a mug. Then, add one tablespoon of milk and one tablespoon of cheese. Unless you are a cheese fanatic (like we are), you can add as much as you like. Lastly, stick the mug in the microwave for one minute to cook on high until done. Take it out, add salt and pepper, and you have a delicious egg breakfast! The outcome was in fact very tasty, even incredibly similar to cooking eggs over a stove. Although be careful not to cook the eggs too long; they may become rubbery.

Blackberry Smoothie

2 cups fresh or frozen blackberries

1 cup plain fat-free yogurt

1 cup apple juice

1/4 cup honey (Optional)

1 large ripe banana

Ice

We know, nobody likes a healthy breakfast. Everyone wants to indulge themselves in calorie filled pancakes and bacon. The blackberry smoothie is a compromise for you. It’s healthy and delicious. Yes, we know that we sound like your mother, or that we are tricking you, but it is true.  Start by cutting up the banana, and add it to the blender. Add the blackberries (or if they aren’t your thing, any berry works here) and the ice. Add the honey, apple juice, and yogurt next. Blend for about a minute until all the clumps are gone. Make sure to have a fire extinguisher near by, for if you are anything like my lovely partner, your blender may catch on fire. Finally, pour it into a tall glass and drink your daily portion of fruit!

Cinnamon Roll in a mug

2 Tbsp applesauce

1 Tbsp vegetable oil

1 Tbsp buttermilk

1/4 tsp vanilla extract

1/4 cup + 1 Tbsp all-purpose flour

2 1/2 Tbsp packed light-brown sugar

3/4 tsp ground cinnamon

1 dash ground nutmeg (optional)

1/4 tsp baking powder

1/8 tsp (scant) salt

Last but not least, we had to add a fan favorite. It’s not as healthy as the smoothie, but it sure is tasty! It’s a Cinnamon Roll in a mug with frosting and everything. Yes, there’s always the option of Pillsbury, but those rolls always take over 15 minutes to bake. While the cinnamon roll in a mug only takes two minutes to bake, you’ll be satisfied and out of the house in under five minutes. Mix together applesauce, vegetable oil, milk, vanilla extract, flour, brown sugar, nutmeg, baking powder, and salt. Also, do NOT forget the ¾ teaspoon of ground cinnamon. The first time around we forgot to add it in, creating flavor havoc. The outcome of the cinnamon roll was quite pleasing. The consistency and taste were up to par.

Next time when you’re running late and you want to avoid the embarrassing incident where your stomach grumbles in class, you now have four delicious solutions.
